It's all about steak and chips
When I think about perfect Sunday treat I always imagine succulent steak and crunchy chips. Such an easy thing to make, even if my chips are double cooked - no worries. Promise you won't spend ages in the kitchen!
Ingredients:
potatoes
good quality steak (never use fillet! Not much flavor for that kind of cooking)
green beans
cherry tomatoes
oil
favorite spices (paprika, chilli, thyme etc)
salt
for gravy:
1 glass of beef stock
1 tbs of flour
1 tbs of butter
pepper (lots!)
glug of red wine if you've got some in the kitchen ;)
How to make it:
1. Chips:
Peel your potatoes and half cook them (about 15 minutes). Leave them in tray to cool down. They'll loose moisture which will help to crisp them up. Now chop your potatoes into chip size - not too small - it's easy to burn them later (got talent towards that ;) ). Put the potato chunks into the plastic bag, add spices and oil (just enough to cover the potato). Freeze. DO NOT defrost them before cooking! Treat them like shop bought chips :)
2. Steak:
I use cast iron pan for my steak. It's the best to take your steak out of the fridge and allow to come up to the room temperature. Rub it with a little bit of oil. Don't season (it might burn on pan). Heat your pan to maximum and cook your steak for 5 minutes each side (medium rare) or to your liking. Season with salt and pepper. Remember to leave the steak to rest (around 7-10 minutes).
3. Veggies:
Bring the water to boil, add green beans and simmer for 4-5 minutes. Add cherry tomatoes, season and drizzle with oil (i like rapeseed).
4. Sauce:
Melt the butter in the saucepan. Stir in the flour and cook for 1-2 minutes. Gradually add stock. You might need to remove it from the heat on the begging. Add as much or as little pepper you like. Add wine if you've got some. Bring to boil and simmer for another 5-10 minutes. Time depends how thick you like your sauce.
