Spicy cauliflower
Challenging myself with Veganuary this year I've must admit: vegan food is challenging but also very addictive. That's one of the dishes that my partner was munching on without typical question: where's the meat? It spicy but refreshing the same time :)
Ingredients:
cauliflower (florets)
coriander
parsley
chickpeas (tin)
chopped tomatoes (1/2 of tin)
2 stalks of celery
fresh red chilli
2 garlic cloves (crushed)
onion (chopped)
1 tsp of ground cumin
pinch of turmeric
1 tsp of ground coriander
couple of cardamom pods
1 star anise
oil
eventually dash of lemon juice
How to make it:
Boil a pot of water. Simmer cauliflower floret for about 8 minutes.
Fry onion, after a minute add garlic and chilli (chopped - if you like spice, whole to take out later - if you like it mild). Add chopped celery and fry until soft. Add all spices. Fry on low heat for another minute. Add drained cauliflower, fry till it gets a bit of color. Add tomatoes and chickpeas, season to taste. Cook for another 5 minutes.
Chop herbs, add dash of lemon if you like it.
