Winter casserole
When it's cold and wet outside you just need some comfort food. Here's an sausage casserole dish - i didn't use real sausages. Made some from ready made stuffing mix from the shop. But feel free to fry up some tasty sausage and just chop it into mouthful slices!

Ingredients:
- 3-4 sausages
- one onion (chopped)
- one carrot (slices)
- mixed color peppers
- 2 cloves of garlic (chopped not minced)
- half of chili pepper (or if you like it spicy put whole in!)
- chickpeas (tin)
- one leek (slices)
- parsley
- cherry tomatoes
- green lentils (1 glass)
- glass of vegetable stock
- 1 tsp of paprika, cumin, thyme
How to make it:
Fry the sausages (whole), then take them out and when a bit colder chop into mouthful pieces. On the same pan: fry carrots (about 2 minutes), then add other vegetables and spices and fry until soft. Add chickpeas, lentils and stock. Reduce heat to minimum. Simmer until it's thicken (around 5 minutes). In the end add cherry tomatoes (i cut them in half) and chopped parsley. How easy was that? ;)
