Sunday Roast
When it's wet and cold outside everybody likes a little bit of comfort food. Here's a perfect Sunday roast: juicy beef with spicy mash and crunchy vegetables :)
Ingredients:
- beef silverside
- potatoes
- brussels sprouts
- curly kale
- fresh thyme, sage and rosemary
- 4 shallots
- 2 cloves of garlic
- small carrot
- small parsnip
- bay leave
- juice of 1/2 lemon
- wholegrain mustard (to the taste)
- butter, milk (or cream if you prefer your mash heavier)
- 2 glasses of red wine (optional)
- good quality beef stock cube
How to make it:
Heat your oven to 190 degrees. Season your beef with salt and pepper and sear it on the frying pan. In a pot prepare: glass of wine, glass of water, herbs, chopped carrot, onion and parsley, crushed garlic (don't bother peeling it). Season and rest your meat on the veg. Cower with lid and put to the oven. For rare: cook for 20 min per 450g plus 10 min; for medium: cook for 25 min per 450g plus 10 min. After cooking cover with foil and leave it to rest.
Then prepare rest on your dinner.
Boil potatoes, mash with butter, mustard and milk (or cream). Season.
Chop sprouts in half, fry in the an until gently brown, add curly kale, dash of water. Cook till water disappear but sprouts are still al dente. Season and add lemon juice to taste.
For gravy:
Dilule your beef stock in half amount of recommended water, add glass of water. Then mash leftover veg (from pot) thru the sieve. Add all yummy juices to your gravy. Add knob of butter. Reduce as much or as little you like.
