Zebra Muffins
If it comes to baking I must admit that I struggle a lot. Not sure if it's because I always prefer savory food or just simply because baking is so hard! One ingredient too much on not enough and your cake will be a disaster. But this rainy Sunday i was successful! Such a simple recipe and lots of nice flavors in the end. No weighing needed neither :D That recipe is for 12 muffins.
Ingredients:
- 2 cups of flour
- 1/2 cup of sugar
- 1 tbs of baking powder
- 1 cup of milk
- 1 large egg (or two medium)
- 1/2 cup of oil
- few drops of vanilla extract
- 2 tbs of cacao powder
- any jam you like
- optional: crushed nuts
- muffin cases
How to make:
Mix flower, sugar and baking powder. Add the wet ingredients: milk, oil, egg and vanilla. Stir. It might look like it won't mix but just be patient with it. Separate in to 2 bowls. Into one of them add cacao powder. Mix. You can stir in your crushed nuts if you like.
Into muffin cases put teaspoon on white butter, then teaspoon of dark one. You can add teaspoon of your favorite jam at this stage. Continue adding white/dark butter to your muffin cases until 3/4 full.
Bake in 175 degrees for 25 - 30 minutes.
