Quiche Lorraine

Quiche is one of the best things to make when you wanna clear your fridge. This time I've made a very well known Quiche Lorraine - on my mums short crust pastry. Perfect brunch when you still in your pajamas late Sunday morning ;)

Ingredients:

for pastry:

- 2 1/4 glass of flour (about 170g)

- 1 1/2 tsp of baking powder

- 0,75g of butter (chilled)

- 3 egg yolks

plus:

- 250ml of single cream

- 4 eggs

- 2 onions (medium) (chopped into

- few rashers of smoked bacon

- 200g of strong cheese

How to make it:

Mix all pastry ingredients - you can chop butter in a smaller pieces. Rub the butter with flour like you would like to make a crumble. You can add a small splash of cold water to combine your ingredients easier. Then cover your pastry in cling film and let it rest in a fridge for half an hour.

Fill your tart tin with pastry, line the base of the pastry with baking paper and then fill it with baking beans (or dry kidney beans or even rice!). Bake in 200 degrees for 10 minutes. Remove beans and paper, bake for another 10 minutes.

Reduce the temperature to 160-170 degrees.

Soften your onions in a pan with butter, fry off (or grill) bacon till crispy. Add both to the bottom of your pastry.

Mix eggs with cream, add lots of seasoning. Pour over onion and bacon. Sprinkle your cheese on top. Bake for 30 minutes or until golden (with a tiny wobble in the middle).

I love to serve it with salad with lots of fresh herbs on the side.
