Upside down apple cake
Sounds weird? I've had a tiny bit of shortcrust pastry and egg whites left (check my Quiche Lorraine recipe) and lots of apple at home. So... Here it is! Delicious, quick and worming upside down apple cake :D
Ingredients:
- handful of shortcrust pastry
- egg whites (from 2-3 eggs)
- 4 apples
- 1 tsp of cinnamon
- 2 tbs of light brown sugar
- juice of half lemon
- 2 tbs of castor sugar
- few drops of vanilla essence
How to make it:
Put your shortcrust pastry into the freezer.
Peel and chop your apples into 1 cm cubes. Add to the pan with light brown sugar and lemon juice. Cook till soft. Add cinnamon and vanilla essence.
Beat egg whites till you can put them above your head ;) Add sugar and beat for another minute.
Place your apples into baking dish. Coat with meringue (bitten egg whites). Great frozen pastry on top.
Bake in 160 degrees until meringue rises and pastry turns golden
Serve with cream.
Mind that's enough for small dish - enough for two portions (for hungry people like in my house!)
