Scrambled tofu
It's the biggest surprise in a long time. I am not the biggest fan of tofu, but that.. Wow! I might even say that i prefer it to usual scrambled eggs! And I mean it. I've serve it with avocado and tomato salsa and toast. Just look at the photo - I am getting hungry already ;)
Ingredients:
- 1/3 of pack of tofu (for one hungry person
- grinded: salt,garlic powder, cumin, turmeric, chili flakes
- red pepper
- small onion
- rocket (optional)
- avocado
- tomato
- coriander
- lime juice (to taste)
- green chili (optional)
Dry tofu: put it between sheets of paper towel and put something heave on top (I've used iron cast pan).
Add a little bit of water to the spices to create the sauce.
Gently fry onion and pepper. Until as soft as you like. Scramble tofu with the for and add to pan. Fry for about two minutes. Add your spicy sauce. Fry until you get the "scrambled eggs" texture (for me another two minutes).
Salsa: Use fork to mash your avocado, add chopped tomato, coriander and lime juice. Season to taste. You add green chili if you like it spicy.
Serve with hot toast and rocket leaves.
