Baked rainbow trout salad
I love fish. Any type, really. But I find a rainbow trout so easy to prepare and so delicious, that i simply cannot resist. This beast was so big, that it was enough for both of us. Healthy and so yummy! And it only take minutes :) I know that crispy chips would go with it perfectly, but I am trying to stay healthy for a bit, so..
Ingredients:
- whole rainbow trout
- dill
- coriander
- samphire
- lemon juice
- mixed salad leaves
- baking paper
- salt, pepper
- a tiny bit of butter
How to make it:
Rinse the samphire. Spread it on a sheet of baking paper. Put the fish on top of it. Season the fish, add seasoning and herbs (all over the fish plus in the middle). Put a little bit of butter on top of the fish. Close it as a little parcel. Bake the fish in 175 degrees for about 25 minutes (depends how big is your fish). Squeeze the lemon juice all over it and serve it with salad.
